Pumpkin and White Bean Soup recipeMakes: 6 servings
Unsweetened apple juice is used in this unique soup. The pumpkin and beans help you increase your fiber and vitamin A intake.
Ingredients:1 1/2 cups apple juice (unsweetened)
1 can small white beans (15 ounces)
1 small onion (finely chopped)
1 cup water
1 can pumpkin (15 ounces)
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg, allspice, and/or ginger (if you like)
1/2 teaspoon black pepper
1/4 teaspoon salt
Directions:Finely chop the small onion.
Put onions, water, and white beans in a blender or mash with a fork until smooth. Set aside.
In a large pot over low heat, add the pumpkin, apple juice, cinnamon, black pepper, and salt. Mix well by stirring with a wooden spoon.
If you using nutmeg, allspice, or ginger, add them in and mix again.
Add the bean mix to the pot.
Cook over low heat for 15-20 minutes, until warmed through.
