Delicious Dunking Dip

Ingredients:

1 cup spinach
·
1 large or 2
small garlic cloves roughly chopped
·
2 tablespoons
lemon juice
·
¼ cup olive oil
·
2 tablespoons
apple cider vinegar
·
1/2 teaspoon salt
·
16 ounces cannellini
beans (liquid drained from can)
·
Blender
·
Fresh vegetables,
whole-wheat crackers or whole-wheat pita bread for dipping
Instructions:
1.
Into the blender
add the spinach, garlic, lemon juice, oil, vinegar and salt. Blend until
spinach is liquefied, about 30 seconds to 1 minute.
2.
Add drained
Cannellini beans to the blender and blend until mixture is smooth, less than 2
minutes.
3.
Serve immediately
or place in the refrigerator to enjoy later.
