Blueberry Caprese Salad Recipe

Blueberry Caprese Salad
Yields 4 to 6 servings
Prep Time: 15 minutes | Cook Time: 0 minutes | Total Time: 15 minutes
1 cup cherry tomatoes
1 cup blueberries
2 cups mozzarella
1/4 cup basil leaves
2 tbsp olive oil
1 tbsp balsamic vinegar
salt and black pepper
1. Cut mozzarella and tomatoes into bite-sized pieces. Tear basil leaves, if large.
2. Combine tomatoes, blueberries and mozzarella in bowl. Toss with basil leaves, olive oil and balsamic vinegar.
3. Season to taste with salt and pepper.
Note: This dish can be made a few hours ahead of time, just cover and refrigerate until ready to serve.
